Honey-coconut chilli prawns

Ingredients:

  • 500 grams pre-cooked prawns, peeled
  • 2 cloves garlic, crushed
  • 100 millilitres coconut milk
  • 2 tablespoons olive oil
  • 1 lime
  • 1 bird’s eye chilli, finely chopped
  • 2 tablespoons honey

Directions:

1. In a bowl, combine the coconut milk, chilli, garlic, honey and lime juice.

2. Pour two-thirds of the coconut and honey mixture over the prawns. Reserve the rest for the end.

3. Thread the prawns onto skewers.

4. In a frying pan, grill the prawns until they’re light brown on both sides.

5. Serve with the remaining coconut and honey sauce.
