Fruity margarita ice pops are a fun way to eat your cocktails

These frozen treats are three margaritas in one. Layers of kiwi, pear and strawberry margaritas are all made with fresh fruit for a refreshing, boozy treat.

While the hands-on time for these ice pops is only about 15 minutes, you will need to freeze each layer for at least 2 hours before you add the next one, so you might want to make these the day before you plan to serve them.

To make these frozen cocktails, you need kiwis, strawberries, a pear, a lime and your favorite tequila.

Start by blending the kiwi ingredients.

Pour it into your ice pop molds, filling them 1/3 full. This makes 6 ice pops, so I used my 4-pop mold and a couple of milk storage bottles. Stick the molds into the freezer for at least 2 hours. Don’t worry about sticks yet.

Next, you’ll blend the pear ingredients, and fill each mold another third. Now it’s time for sticks.

Place a piece of foil over your molds, and use the tip of a steak knife to poke a little hole for each ice pop stick. Poke the stick through and into the liquid pear layer. Freeze them another 2 hours.

Finally you’re ready for the strawberry layer. You can remove the foil, because the sticks are firmly frozen in the pear layer. Pour the strawberry mix in, being careful to not cover your sticks in margarita. Freeze another 2 hours.

At this point you can eat your ice pops, but you should cover any you’re not eating in the next 24 hours with plastic wrap to avoid freezer burn.

Each ice pop is full of fresh fruit, so that means you can eat as many as you want, right? Go ahead, I won’t tell!

Triple margarita ice pops recipe

These ice pops are a tangy-sweet mix of fruit and tequila. Make sure to taste each mix before you freeze it. You might want to adjust the sugar or lime juice quantities, depending on how sweet your fruit is.

Ingredients:

Kiwi margarita

  • 3 kiwis, peeled
  • 1/2 teaspoon sugar
  • 1 ounce tequila

Pear margarita

  • 1 large, firm pear, peeled and cored
  • 1 ounce tequila
  • 1 tablespoon lime juice

Strawberry margarita

  • 12 medium strawberries, hulled
  • 1 ounce tequila
  • 1 tablespoon lime juice

Directions:

  1. Blend the kiwis, sugar and tequila, and then fill each ice pop mold 1/3 full with the margarita mix.
  2. Freeze for at least 2 hours.
  3. Blend the pear, tequila and lime juice, and then fill another 1/3 into each ice pop mold.
  4. Place foil over the molds, and insert an ice pop stick into each one, making sure it goes into the pear layer.
  5. Freeze for at least 2 hours.
  6. Blend the strawberries, tequila and lime juice.
  7. Remove the foil from your ice pop molds, and fill the remaining third with the strawberry margarita mix.
  8. Freeze for at least 2 hours.
