Taco Tuesday was a staple at my house, growing up.
But those corn shells were never anyone’s favorite part of the meal because of their propensity to immediately crumble apart when you started eating and my inability to remember to take them out of the oven before they burned (sorry, family!).

Oh, Bite It! solved this problem. And then kept running with it. If you don’t feel like dealing with taco shells, why not skip soft tortillas altogether and sprint right to deep-fried funnel cakes? Um, yeah. Count me in.
The funnel cakes are super easy to make. Whip up your favorite pancake batter recipe, sprinkle in a bit of chili powder, and then use a Ziploc baggie with a corner snipped off to drizzle the batter into hot oil. Fry them on each side for 1 minute, drain on paper towels, and bam! Your taco shell is made.

Throw on any topping you like. Taco meat, cheese, avocado, salsa, sour cream — I think we can all agree that literally any taco topping would taste better on top of a funnel cake. You can try it for yourself here.
