Caramelized onion quiche perfect for easy gluten-free entertaining

There’s nothing more popular at brunch than eggs. Everyone loves them no matter if they are scrambled, sunny-side up or turned into a quiche.

When I have guests over, I love serving brunch, especially this quiche since it is not only gluten-free but also very easy to prepare.

Caramelized onions add such a wonderful flavor to this quiche. As they cook, they become deep and dark but surprisingly sweet and really make this egg dish shine. The Gruyère cheese adds some creaminess, while the Parmesan gives the dish just the right amount of saltiness.

Garnish with fresh chopped parsley, and serve this for your next brunch. This quiche also makes great leftovers for lunch or for dinner.

Gluten-free caramelized onion and Gruyère quiche recipe

Light, airy and full of caramelized onions and creamy Gruyère and Parmesan cheeses, this gluten-free quiche is baked in a simple, almond flour-based crust.

Prep time: 25 minutes | Bake time: 50 minutes | Total time: 1 hour 15 minutes

Ingredients:

For the crust

  • 1-3/4 cups almond flour or almond meal
  • 1/4 cup coconut flour
  • 1/4 cup water
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

For the filling

  • 2 tablespoons unsalted butter
  • 1 large sweet onion, diced very fine
  • 1 tablespoon sugar
  • 4 whole eggs
  • 4 egg whites
  • 1/4 cup heavy whipping cream or half-and-half
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 3/4 cup grated Gruyère cheese
  • 1/4 cup freshly grated Parmesan cheese
  • Fresh parsley, for garnish

Directions:

  1. Spray a skillet with nonstick cooking spray, and set it aside. Heat the oven to 375 degrees F.
  2. In a mixing bowl, combine all the ingredients for the crust. Mix well until there are no lumps and the mixture holds together well.
  3. Press the crust into the bottom of the skillet and about halfway up the sides. Bake the crust for 18 to 20 minutes or until golden brown.
  4. Meanwhile, heat a large pan over medium heat, and add the butter and diced onions.
  5. Cook for 10 minutes, until the onions soften and become brown.
  6. Add the sugar, and cook for an additional 10 minutes or until the onions are a deep, dark brown color while stirring frequently so the onions do not burn.
  7. In a bowl, whisk together the whole eggs, egg whites and heavy whipping cream. Fold in the seasonings and the cheeses, and mix well.
  8. Add the caramelized onions to the egg mixture, and pour into the baked crust.
  9. Bake the quiche for 25 to 30 minutes or until the center is cooked and firm.
  10. Remove from the oven, and garnish with fresh parsley. Slice into wedges, and serve warm.
