Homemade soft serve always looks amazing, but what if you don’t have an ice cream maker? And what if it’s just too hot to leave the house for the local froyo joint?
Luckily there’s a way for you to make the perfect, light-yet-rich soft serve ice cream at home. All you need is some dry ice and a stand mixer. Soft serve in your PJs? Yeah, it’s happening.
It’s so easy. First, you make your ice cream base out of milk, cream, sugar and a few more easily obtainable ingredients (you can get dry ice at the grocery store or at large, big-box and wholesale stores). Blend or whisk together the base, heat it up to more thoroughly combine the ingredients, and then re-chill. Eat some store-bought ice cream in the meantime if you need to — we won’t tell.
Once everything’s nice and cold, pour your ice cream base into your mixer, and start it on low speed. Smash up your dry ice with a mallet or rolling pin. For once it’s totally OK to get carried away with the kitchen mallet — you want the ice to be almost powdery. Maybe look at your ex’s Facebook page beforehand to get your adrenaline going. Slowly add your crushed dry ice to the ice cream base, a spoonful at a time, until the mixture becomes thick and creamy, just like real soft serve. It’s like cooking and a fun science project in one.
