Ingredients:
For the soup
- 2 tablespoons olive oil
- 1 large sweet onion, diced
- 2 garlic cloves, minced
- 2 cups canned diced tomatoes
- 6 cups vegetable broth
- 2 cups cooked lentils
- 1 envelope taco seasoning
- 1 lime, juiced
- Salt and pepper, to taste
For the toppings
- Low-fat sour cream
- Diced tomatoes
- Thinly sliced green onions
- Fresh cilantro
- Crumbled Cotija cheese
Directions:
- Heat a large pan over high heat.
- Add in the olive oil, onions and garlic, and cook for 5 minutes or until the onions are translucent and the garlic is fragrant. Transfer the mixture to the bowl of the slow cooker.
- To the slow cooker, add the diced tomatoes, vegetable broth, lentils, taco seasoning and the lime juice.
- Season with salt and pepper, and stir well.
- Place the lid on the cooker, and set the timer to cook on low for 4 hours.
