The best pizzas are made in ultra-hot ovens, which makes your grill ideal since your oven just can’t get as hot. Whether you use a pizza stone or screen or just place it right over the grates, it will be perfect every time.

How to grill a pizza

Start with the highest-quality dough (or use your favorite recipe), and roll it out as you would if you were cooking it in the oven. Preheat your grill as hot as you can get it (600 degrees F is ideal). Brush the dough generously with olive oil on the side you plan to lay on the grill. Grill it for a couple of minutes, using heat-resistant tongs to check on it. Meanwhile, spread the top side with olive oil too. Once you see grill marks, you’re good; just don’t let it get too crispy (or you’ll make crackers). Then flip it.

Now top it (if you go nuts with a lot of toppings, it won’t cook as well), and close the lid for a few minutes (not more than five, but start checking at three). Your cook time will vary based on your temperature and even how efficient your grill is.
