Make bite-size chicken Parm using crisp homemade nuggets

This chicken Parm is practically a finger food.

And I can tell you from personal experience that this dish is really easy to eat. It’s made with a simple homemade marinara sauce that just requires a quick simmer before serving, and the chicken nuggets are a snap.

The only problem I have with making these chicken nuggets is keeping my hands off them when they’re fresh, hot and right out of the pan. I like to pick the crispest piece, add salt to it and then pop it into my mouth. Then repeat.

Dinner for two is a breeze when it involves a simple homemade marinara sauce and chicken nugget Parmesan. Kids and adults alike love it when it’s served over mini bow tie pasta.

Prep time: 10 minutes | Cook time: 25 minutes | Total time: 35 minutes

Ingredients:

For the marinara sauce

  • 1 (15 ounce) can tomato sauce
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon dried parsley flakes
  • 1/4 teaspoon granulated garlic
  • 1 teaspoon dried oregano flakes
  • 1/2 teaspoon dried basil leaves
  • 4 dashes salt
For the chicken nugget Parmesan
  • 2 cups cooked mini bow tie pasta (mini farfalle)
  • 1 large, boneless, skinless chicken breast (or 2 smaller ones), cut into nugget-size cubes
  • 1 cup flour
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1/3 cup canola oil (amount may vary depending on size of skillet)
  • Marinara sauce
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons thinly sliced fresh basil, for garnish

Directions:

For the marinara sauce

  1. To a medium-size saucepan, add all the ingredients, and stir.
  2. Heat the pan on low heat, and let the sauce simmer with a lid on while making the chicken.

For the chicken nugget Parmesan

  1. To a small- to medium-size bowl, add the flour.
  2. On a large plate, lay the pieces of chicken, and coat all sides with salt and pepper.
  3. Put the pieces of chicken into the bowl of flour, and coat all sides with the flour. Set aside for a moment.
  4. Heat a medium- to large-size skillet on medium heat.
  5. Add the canola oil.
  6. Flick a little bit of flour into the pan, and when it sizzles, add the pieces of chicken.
  7. Turn them as they cook until all sides are a golden color and thoroughly cooked.
  8. Remove the chicken nuggets from the pan onto a plate with a cooling rack on it (or a plate lined with a paper towel).
  9. Warm the bow tie pasta in the microwave, and add it to the serving plates or shallow bowls.
  10. Top with the chicken nuggets.
  11. Ladle the marinara sauce on top of the nuggets.
  12. Top with grated Parmesan cheese, and garnish with fresh basil.
  13. Serve while hot.
