During these hot months, one of my kid’s all-time-favorite treats are popsicles. They are quick, easy and taste soooo good. I wanted to create a healthier version of one of our all-time-favorite snacks — something my kids would eat and have no idea that they are a notch healthier than the store-bought versions.
I decided to go with Greek yogurt and fresh fruit. Here are a few of the recipes I came up with…
Chocolate-covered strawberry and Greek yogurt pops
Ingredients:
- 1 carton of fresh strawberries
- 32 ounces strawberry-flavored Greek yogurt
- 12 ounces dark melting wafers for candy making and dipping (I used Ghirardelli)
Directions:
- Cut the tops off of the strawberries.
- Place the strawberries in a food processor or blender and puree them. Place 1/4 of the mixture aside.
- Combine the yogurt and the remaining 3/4 of the strawberry mixture in a medium sized bowl. Stir it until blended.
- Fill your popsicle molds 7/8 full with the yogurt mixture. Scoop the remaining strawberry puree on top to fill the molds completely.
- Add the popsicle sticks and freeze them completely.
- When the popsicles are completely frozen, run hot water on the outside of their molds. They should break free and come out easily.
- Melt the chocolates in the microwave. Place them in a glass mixing bowl. Microwave them for one minute. Take them out and stir them. If they are not completely melted, you can microwave them in 20-second intervals, stirring in between until they are.
- Dip the popsicles into the chocolate. Hold them up for a minute while the chocolate hardens. This happens pretty quickly.
They are now ready to enjoy!
Mango and Greek yogurt popsicles
Ingredients:
- 2 fresh mangos, cut (chunked or sliced)
- 32 ounces honey-sweetened Greek yogurt
Directions:
- Place the mango chunks in a food processor or blender and puree them.
- Fill your popsicle molds alternating the yogurt and mango puree.
- Add the popsicle sticks and freeze completely.
Fresh Raspberry & Greek Yogurt Popsicles
Ingredients:
- 1 carton of fresh raspberries
- 32 ounces honey-sweetened Greek yogurt
Directions:
- Place the raspberries in a food processor or blender and puree them.
- Combine the yogurt and raspberry puree in a bowl and blend them together.
- Fill your popsicle molds.
- Add the popsicle sticks and freeze completely.
Fresh Blueberry & Greek Yogurt Popsicles
Ingredients:
- 1 carton of fresh blueberries
- 32 ounces honey-sweetened Greek yogurt
- 1/4 cup coconut milk
Directions:
- Place the blueberries in a food processor or blender and puree them.
- Combine the blueberry puree with the coconut milk.
- Fill your popsicle molds alternating the blueberry mixture and the yogurt.
- Add the popsicle sticks and freeze completely.
You can easily change ingredients as needed to fit the needs of your family. For example, I used sweetened yogurt but you can use unsweetened or you can add your own sweeteners — such as honey, sugar, brown sugar etc. — to any of the the fruit-and-yogurt mixtures.
