Pork loin that gives you an excuse to have bacon and bourbon for dinner

Talk about melt-in-your-mouth tender — this pork loin won’t disappoint you. Plus, it’s wrapped in bacon. And when it’s topped with a heavenly bourbon sauce, it makes for an insanely amazing dinner.

Pork tenderloin is one of my go-to meals because it can be made in the oven or on the barbecue and cooked whole or cut into medallions or small pieces. It’s so versatile.

This pork loin is super easy to make with only 3 ingredients, and that’s counting the pepper.

And for a little extra-special touch, buttery bourbon sauce is drizzled on top of the pork and tastes so good with the bacon.

You’ll just have to give this succulent pork loin a try — that’s all there is to it.

Bacon-wrapped pork tenderloin with bourbon sauce recipe

Succulent, tender and moist bacon-wrapped pork tenderloin is topped with a bourbon sauce made with butter and maple syrup.

Prep time: 10 minutes | Cook time: 50 minutes | Inactive time: 8 minutes | Total time: 1 hour 8 minutes

Ingredients:

For the pork tenderloin

  • 1 pound boneless pork tenderloin
  • 4 slices bacon
  • 4 dashes ground black pepper

For the bourbon sauce

  • 1/4 cup bourbon whiskey
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 2 dashes salt
  • 1 tablespoon maple syrup

Directions:

For the pork tenderloin

  1. Heat the oven to 350 degrees F.
  2. Wrap the pieces of bacon around the pork from 1 end to the other, covering as much of the pork as possible. Gently tuck in the end of each piece of bacon under part of the bacon that is already wrapped.
  3. In an ovenproof skillet or shallow pan, lay the bacon-wrapped tenderloin in the middle.
  4. Bake uncovered until thoroughly cooked (about 50 minutes).
  5. Remove from the oven, and let rest for about 8 minutes before cutting.
  6. Cut in thick slices, and serve warm, topped with bourbon sauce.
  7. Serve with vegetables and potatoes.

For the bourbon sauce

  1. About 10 minutes before the pork is done cooking, heat a medium-size saucepan on low to medium heat, and add the bourbon, butter, brown sugar, salt and maple syrup.
  2. Stir as the sauce warms.
  3. Continue to cook on low heat until the sauce starts to slightly thicken (about 10 to 12 minutes). Stir as the sauce warms.
  4. Drizzle on top of thickly sliced, bacon-wrapped pork tenderloin.
