Make some ice cream, cut it into pieces, drizzle it in chocolate and away you go. Making ice cream chocolate bites is so easy that you’ll wonder why you ever bothered to eat ice cream any other way.
Ice cream chocolate bites
It’s not hard to make ice cream (of any flavour you like) at home, but if you can’t be bothered, you can buy your favourite ice cream from the supermarket and follow the second (ice cream bite) part of the recipe.
Makes 20-30 bites
Prep time: For the ice cream: 5 minutes. For the bites: 5 minutes | Cook time: For the ice cream: 3-4 hours. For the bites: 5-10 minutes.
Total time: For the ice cream: 4 hours, 5 minutes. For the bites: 15-20 minutes.
Ingredients:
For the ice cream:
- 1 cup thickened cream
- 3/4 cup sweetened condensed milk
- 1 teaspoon vanilla essence
- 2 teaspoons granulated sugar
- Flavour (I used fresh raspberries, but you can add anything you like)
For the ice cream bites:
- Ice cream
- 150 grams dark or milk chocolate
- 1/2 cup coconut oil
Directions:
For the ice cream:
- In a medium bowl, whip the thickened cream and sugar together until the mixture forms stiff peaks.
- Working 1 tablespoon at a time, gently fold the condensed milk into the mixture.
- Add your flavour and the vanilla essence into the mixture and stir it gently until it’s creamy but still has light lumps in it.
- Pour the mixture into a shallow freezer-friendly container — or containers — and freeze for 3 or 4 hours, or until it turns into ice cream. Just be aware that if you use fresh fruit or an additive that has water in it, the creamy part of the ice cream will rise to the top and the more watery ice cream will form a layer at the bottom. The taste is still sensational, though.
For the ice cream bites:
- Heat the chocolate and coconut oil over steam or in a microwave until it’s completely melted and then stir it so that it combines.
- Prepare your serving platter or plate and pour a thin layer of the chocolate mixture on it as the base for your ice cream bites. Then refrigerate it until it turns solid (it should only take a couple of minutes).
- In the meantime, take out your ice cream and chop it up into rough cubes or pieces.
- Take the plate or platter out of the fridge and place the ice cream pieces on it.
- Make sure that the remaining chocolate is close to room temperature and then, working slowly with a spoon, drizzle the chocolate over the pieces. The higher solid point of the coconut oil (around 25 degrees C) should set the chocolate straightaway.
- Now they’re ready to serve. If you like, you can use a hot knife (just dip it into hot water) to slice the chocolate base between the bites so that they are easier to pick up.
Step 1:
Freeze the ice cream in a shallow dish. Then pop it out and get ready to slice.
Step 2:
Slice the ice cream into bite-sized pieces.
Step 3:
Pour chocolate on a plate to make a thin chocolate base.
Step 4:
Place the chopped-up ice cream pieces on the chocolate base.
Step 5:
Drizzle chocolate over the ice cream pieces.
