Apple fritter cake recipe
This recipe uses white whole-wheat flour, which is delicious, but if you don’t have it on hand, all-purpose flour will work too.
Serves 4-6
Prep time: 20 minutes | Bake time: 40 minutes | Total time: 1 hour
Ingredients:
For the filling
- 1 cup small-diced apples
- 1/3 cup dark brown sugar
- 1/4 cup water
- 2 tablespoons cornstarch
- 1 teaspoon apple pie spice
For the cake
- 1/3 cup dark brown sugar
- 3 tablespoons unsalted butter
- 3 tablespoons apple butter
- 1 large egg
- 1 cup white whole-wheat flour
- 1 teaspoon apple pie spice
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1/2 cup Greek yogurt
For the glaze
- 1 cup powdered sugar
- 3-4 tablespoons milk
- 1/2 teaspoon vanilla bean paste or extract
Directions:
For the filling
- To a small saucepan set over medium heat, add the apples, brown sugar, water, cornstarch and apple pie spice.
- Simmer until the mixture thickens, and then set aside to cool while you prepare the cake.
For the cake
- Heat the oven to 350 degrees F, and spray an 8 x 8-inch baking dish with nonstick cooking spray.
- To the bowl of your electric mixer, add the brown sugar and butter. Beat until the mixture is combined and creamy, about 3 minutes.
- Add in the apple butter and egg. Mix until combined.
- In a medium bowl, whisk together the flour, apple pie spice, baking soda, baking powder and kosher salt.
- Add the dry ingredients to the mixer, alternating with the yogurt. Mix together until fully combined.
- Spread 1/2 the batter into the bottom of the prepared baking dish, and top with the apple mixture.
- Spread the remaining batter on top of the apple mixture. It doesn’t have to cover it completely, but try to cover as much as you can.
- Place in the oven, and bake for about 40 minutes, until the cake is fully cooked and lightly browned on top.
- Remove from the oven, and immediately pour the glaze over cake.
- Let cool for about 2 hours so the apples and glaze can set up.
For the glaze
- Whisk together the ingredients until smooth. If it’s too thick to pour, then add a little more milk. If it’s too thin, then add more powdered sugar.
