I’ve reworked the classic Cobb salad, dressed it with homemade ranch dressing and stuffed it into sandwich wraps to make a filling and fabulous meal. Kale makes an appearance in this wrap to help turn this into a heartier sandwich.
I love kale as much as (OK, maybe more than) the next guy, but even I’ll admit it can be tough to take, and I mean that literally. If you massage kale before serving it, you’ll enjoy it much more. Think about it — don’t you soften up a bit after a massage?
You’ll love this sandwich packed with kale, bits of crispy bacon, hard-boiled eggs, turkey, tomatoes, avocado and blue cheese. Drizzle it all with creamy ranch dressing, and you’ll reach for this sandwich again and again.
Kale Cobb salad sandwich wraps recipe
Serves 4
Prep time: 15 minutes
Ingredients:
For the dressing
- 3/4 cup milk
- 1-1/2 tablespoons lemon juice
- 5 tablespoons mayonnaise
- 3 tablespoons plain Greek yogurt
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon dried onion
- 1/2 teaspoon dried dill
- 4 sandwich wraps
For the salad
- 4 cups (packed) kale leave, stems removed
- 4 hard-boiled eggs, chopped
- 4 slices cooked bacon, cut into pieces
- 4 ounces deli turkey, diced
- 1 large tomato, diced
- 1/2 large avocado, diced
- 2 ounces blue cheese crumbles
Directions:
For the dressing
- To a medium bowl, add the milk and lemon juice, and allow to sit for 2 to 3 minutes.
- Add the mayonnaise, yogurt and seasonings. Mix well. Taste, and adjust the seasoning as needed.
- Refrigerate until ready to serve.
For the salad
- To a large bowl, add the kale leaves, and use your hands to gently rub the leaves together for several minutes until they soften and the leaves darken slightly.
- Add the remaining ingredients to the bowl, and toss gently.
- Drizzle with the ranch dressing, and toss to coat.
- Divide the salad equally among the sandwich wraps. Roll, and serve immediately.
