I will honestly admit that I have a sweet tooth, and so I can get totally candied out this time of year. There is one treat that I will never get sick of though, and that’s cookies.
This recipe is super simple! Using store-bought sugar cookie mix, you can transform basic sugar cookies into delicious pumpkin spice sugar cookies. Mmm! They have a subtle pumpkin flavor with a pinch of cinnamon and allspice that really takes these cookies to the next level of amazing. The best part is that they take about 10 minutes to mix up and shape, and another 10 minutes to bake. Fresh, homemade cookies in 20 minutes? Oh yes!
Pumpkin spice sugar cookies recipe
These Super Simple Pumpkin Spice Sugar Cookies are a breeze to make, and are a fun and festive fall treat that everyone will enjoy!
Yield about 24 cookies
Prep time: 10 Minutes | Cook time: 10 Minutes (per batch) | Total time: 20 minutes
Ingredients:
- 1 box of store-bought sugar cookie mix
- 1 egg
- 1 stick of butter, brought to room temperature
- 3 tablespoons all-purpose flour
- 1 tablespoon pumpkin purée
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
Directions:
- Preheat your oven to 350 degrees F.
- In a mixing bowl, combine all ingredients and mix until a smooth dough ball forms. I like to use my hands because it gets pretty tough with a spoon.
- On a lightly floured surface, use a rolling pin to roll out the dough to 1/4 inch thick.
- Using a 2-inch diameter biscuit cutter, punch out the sugar cookies and place them on a baking sheet lined with parchment paper or a silicone baking mat.
- Using the extra scraps of dough, roll out small pieces for the pumpkin stems and squish them into the top of the cookie.
- With a knife, lightly scour a few lines about half way through the cookie to represent the pumpkins ridges.
- Bake each batch for 10 minutes, until the cookies become golden brown.
- Allow the sheet to cool completely before placing any new cookies on the sheet for the next batch.
