These are not your ordinary mashed potatoes. These are so packed with flavor they’ll be the favorite dish on your holiday table.
Chipotle and cream cheese pair up to make this robust side dish. And it even comes with a hint of lime. There’s just enough heat in these mashed potatoes to make you notice, and did I mention it comes with butter?
I like to make mashed potatoes with the skins left on for a more hearty texture. And of course, then I don’t have to peel the potatoes.
When topped with a bit of lime zest, these spuds make for a spicy side dish that tastes wonderful.
Chipotle and cream cheese mashed potatoes recipe
Serves 2
Prep time: 12 minutes | Cook time: 28 minutes | Total time: 40 minutes
Ingredients:
- 3 russet potatoes, skins on
- 1/4 cup milk
- 1/4 cup cream cheese, softened
- 1/2 teaspoon chipotle chili powder
- 2 tablespoons butter
- 1/8 teaspoon ground cumin
- Salt, to taste
- 1/8 teaspoon ground black pepper
- 3 teaspoons butter, for garnish
- 1 lime, zested, for garnish
Directions:
- In a medium-size pan, bring water to a boil, and add the potatoes. Let cook until they are tender when putting a fork through them (about 25 minutes).
- Heat a small pan on medium heat, and add the butter and chipotle. Stir as the butter melts. Set aside for a moment.
- To a medium-size mixing bowl, add the potatoes, milk, cream cheese, melted butter mixture, cumin, salt and pepper. Whip the potatoes with a mixer.
- If the potatoes are too thick, add a little bit more milk.
- Serve while hot, and top with butter and lime zest.
These mashed potatoes come packed with jalapeño jack cheese and cilantro. It’s so good with the melted cheese inside the potatoes that you may want to eat them first before anything else that’s on the table.
And of course these spuds have their share of butter added too.
Cilantro and jalapeño jack cheese mashed potatoes recipe

Ingredients:
- 3 russet potatoes, skins on
- 1/4 cup milk
- 1/2 cup shredded jalapeño jack cheese
- 1/4 cup cilantro, chopped
- 2 tablespoons butter
- Salt, to taste
- 1/8 teaspoon ground black pepper
- 3 teaspoons butter, for garnish
- 1 tablespoon chopped cilantro, for garnish
Directions:
- In a medium-size pan, bring water to a boil, and add the potatoes. Let cook until they are tender when putting a fork through them (about 25 minutes).

Feta cheese gives these mashed potatoes great flavor. But not only does the feta taste wonderful, there is also a whole bulb of roasted garlic in the mix.
It’s a wonderful combination for a side that goes with just about any main dish.
Feta and roasted garlic mashed potatoes recipe
Serves 2
Prep time: 10 minutes | Cook time: 30 minutes | Total time: 40 minutes
Ingredients:
- 5 small- to medium-size red potatoes, skins on
- 1/4 cup milk
- 1/2 cup crumbled feta cheese
- 1 garlic bulb
- 2 drizzles olive oil
- 2 tablespoons butter
- Salt, to taste
- 1/8 teaspoon ground black pepper
- 3 teaspoons butter, for garnish
- 1 tablespoon chopped Italian parsley, for garnish
Directions:
- Heat the oven to 375 degrees F.
- On a sheet of foil, place the bulb of garlic and olive oil. Let bake until the garlic is roasted (about 27 minutes).
- While the garlic is roasting, in a medium-size pan, bring water to a boil, and add the potatoes. Let cook until they are tender when putting a fork through them (about 25 minutes).
- To a medium-size mixing bowl, add the potatoes, milk, feta, butter, roasted garlic (squeeze the garlic out of each clove), salt and pepper. Beat the potatoes with a mixer until light and fluffy.
- If the potatoes are too thick, add a little bit more milk.
- Serve while hot, and top with butter and parsley.
