3. Dutch baby pancakes

After the flourless chocolate cake fiasco, I was worried about trying the Dutch baby pancakes. Eggs are what make the pancakes get so delightfully puffy at the edges while remaining custardy in the middle. Would VeganEgg be able to perform?

Vegan

Taste: Really yummy. No off flavors, just the goodness of a homey little pancake.

Texture: This pancake didn’t have the puffy texture of a traditional Dutch baby pancake. It was more like a cupcake or a regular pancake, though it did remain kind of custardy in the very center, like the real thing.

Overall: I wouldn’t say this is a perfect replacement for a traditional Dutch baby pancake, but it was definitely really good. I would probably use VeganEgg in this recipe again, even knowing that the texture would be a little denser than in the usual preparation.

Non-vegan

Taste: Yummy!

Texture: Light, crackly and poofy on the edges, dense and custardy in the center.

Overall: This was a pretty standard Dutch baby pancake both in taste and texture. You can tell the traditional egg has a leavening power that VeganEgg seems to lack.
