Serves 6 – 8
Prep time: 10 minutes | Cook time: 10 minutes | Inactive time: 55 minutes | Total time: 1 hour 15 minutes
Ingredients:
- 1 large brown paper bag
- 1-1/4 cups (unpopped) corn kernels
- 1/2 cup melted butter
- 1/4 cup light corn syrup
- 1 cup brown sugar, packed
- 1 teaspoon caramel or vanilla extract
- Sea salt
- 2 cups chocolate chips
- 2 tablespoons coconut oil
- 1 cup white chocolate chips, chopped
Directions:
- Add the corn kernels to the brown paper bag, and line a large baking sheet with parchment paper.
- To a microwave-safe bowl, add the remaining ingredients for the popcorn, and heat on high for about 2 minutes or until the mixture is very hot and the sugar has melted.
- Very carefully drizzle the caramel over the corn kernels, and fold the bag several times to close it.
- Pop the corn for about 2 minutes, remove and shake the bag, and then pop again for another 2 minutes.
- Pour the caramel corn out onto the baking sheet, and allow it to dry for 10 minutes.
- To a double boiler, add the chocolate chips and coconut oil. Slowly melt the chocolate over medium heat for about 5 minutes, and then using a spoon, quickly drizzle it over the dried popcorn.
- Finally, sprinkle the sea salt over the popcorn, along with the chopped white chocolate chips, and allow to dry for about 45 minutes.
- Once dry, either serve or store in an airtight container for several days.
