Homemade coconut oil granola gives your yogurt a hearty crunch

There is something so delicious about homemade granola. It’s super simple to make and is a fraction of the price you would pay in the store. Plus, you can mix in whatever dried fruits or nuts you love.

In this granola I stirred in some dried cranberries, dried apricots and dried prunes. I know you’re thinking to yourself, “Umm… I’ll pass on the prunes.” Listen, I know they have a bad rep, but prunes are delicious, and you should definitely give them a try. Plus, they’re good for you, and we all should love things that are good for us.

Coconut oil granola yogurt bowls recipe

Serves 4

Prep time: 10 minutes | Cook time: 10 minutes | Total time: 20 minutes

Ingredients:

For the granola

  • 3 cups rolled oats
  • 1 cup walnuts, chopped
  • 1/3 cup coconut palm sugar
  • 2 tablespoons chia seeds
  • 2 tablespoons flaxseeds
  • 3 tablespoons coconut oil, melted
  • 3 tablespoons honey
  • 3 tablespoons maple syrup
  • 1/2 teaspoon vanilla bean paste
  • 1/4 cup dried cranberries
  • 1/4 cup chopped dried apricots
  • 1/4 cup chopped prunes

For the yogurt parfait

  • Prepared coconut oil granola
  • 2 cups vanilla Greek yogurt
  • Cinnamon sugar (optional)

Directions:

For the granola

  1. Heat the oven to 350 degrees F, and line a rimmed baking sheet with parchment paper.
  2. To a large bowl, add the oats, chopped walnuts, coconut palm sugar, chia seeds and flaxseeds.
  3. In a small bowl, mix together the melted coconut oil, honey, maple syrup and vanilla bean paste.
  4. Pour the coconut oil mixture over the oat mixture, and stir to combine.
  5. Spread the mixture out onto the prepared baking sheet. Some of the oats can cluster together, so no need to make sure it’s completely broken up unless that is how you prefer your granola.
  6. Bake for about 5 minutes, stir, and bake for another 5 minutes. The oats should be slightly toasted. Bake longer if needed.
  7. After it’s lightly toasted, remove from the oven, and let cool. Break into small pieces if needed.
  8. To a bowl, add the granola, and stir in the dried cranberries, dried apricots and prunes.

For the yogurt parfait

  1. To a bowl, add the yogurt, top with desired amount of granola, and sprinkle with cinnamon sugar.
