Spicy chicken fajita burgers are low-carb and piled high with veggies

If you’re like me, making a simple decision about what to have for dinner can be quite hard. Sometimes you want two things at once, and making the choice is anything but simple. This recipe gives you the best of both worlds by allowing you to enjoy a juicy burger while satisfying those cravings for Mexican food. In this case, fajitas.

I used ground chicken in this recipe and combined it with flavorful fajita seasonings, spicy chili powder and cumin. For added flavor I decided to sauté fajita veggies and serve them as a topping on these tasty burgers. And to keep things low carb and gluten free, they’re served lettuce wrap-style.

Spicy chicken fajita burgers recipe

Serves 4

Prep time: 15 minutes | Cook time: 15 minutes | Total time: 30 minutes

Ingredients:

For the veggies

  • 1 tablespoon olive oil
  • 1 large red bell pepper
  • 1 medium sweet onion
  • 1/2 small red onion
  • 1 teaspoon cumin
  • 1/4 teaspoon chili powder

For the burgers

  • 1 pound ground chicken breast
  • 1 tablespoon olive oil
  • 1 envelope fajita seasoning
  • 1 teaspoon garlic powder
  • 1 lime, juiced
  • Salt and pepper
  • Romaine lettuce leaves

Toppings

  • Sour cream
  • Shredded cheddar cheese blend
  • Diced tomato
  • Jalapeño slices
  • Fresh cilantro

Directions:

  1. Heat a skillet over medium heat.
  2. Add the oil, vegetables and seasonings, and cook for 5 minutes or until the vegetables are softened.
  3. In a bowl, combine the ingredients for the burgers, and mix well.
  4. Heat a grill pan over medium heat, and add the burgers to the pan.
  5. Grill each burger for 4 – 5 minutes per side or until the juices run clear.
  6. Arrange several fresh romaine leaves on a plate.
  7. Add the grilled burger, and top with sautéed fajita veggies, sour cream, cheese, diced tomatoes, jalapeños and cilantro, if desired. Best served warm.
