Apple fries with vanilla-caramel sauce recipe

Ingredients:
For the apple fries
- 3 large Granny Smith apples, peeled, cored, cut into fairly thick strips
- 1 cup cornstarch
- 1 cup canola oil (amount may vary depending on the size of your pan)
- 3/4 cup granulated sugar (for coating the fries)
- 1/2 teaspoon ground cinnamon (for coating the fries)
For the vanilla-caramel sauce
- 1-1/4 cups granulated sugar
- 1/3 cup water
- 3/4 cup heavy cream
- 2 tablespoons butter
- 1/4 teaspoon sea salt
- 1-1/4 teaspoons vanilla extract
Directions:
For the apple fries
- To a small bowl, add the sugar and cinnamon. Stir together, and set aside.
- Dredge the apple slices in the cornstarch.
- Heat a large skillet on medium heat, and add the oil.
- Sprinkle a bit of cornstarch into the oil, and when it sizzles, carefully add the apples.
- Turn the apples as they cook. If the oil gets too hot, turn the heat down a bit.
- When the apples are a golden color on all sides, transfer them to a cooling rack (with a plate underneath to catch excess oil).
- When the fries are cool enough to handle, coat them in the cinnamon and sugar mixture. Serve right away with caramel sauce.
For the vanilla-caramel sauce
- Heat a large, heavy pot on low to medium heat. Add the sugar and water.
- Don’t stir. Instead move the pan around a bit if needed.
- Watch the sugar mixture very closely. Make sure to have the remaining ingredients measured out and ready to add to the pot when needed.
- Continue to closely watch the sugar mixture. When it starts to turn a golden color, remove it from the heat, and very carefully pour in the cream while stirring the mixture at the same time with a heat-resistant spatula. The sugar mixture will be so hot that it will bubble up fairly high.
- Stir in the butter, salt and vanilla. Continue stirring until the butter is melted.
- Very carefully pour into small jars. Let the caramel cool, seal the jars, and store in the refrigerator.
