Slow cooker chicken Bolognese — your favorite sauce made effortless

Meat sauce is great, but you can feel even better about it when it’s made with healthier ground chicken. Plus it’s so easy to make because it all just gets thrown into the slow cooker.

Trust me when I say you’ll love this sauce. I love it served over pasta, but it also works great in baked pasta dishes or even just eaten straight from the slow cooker. (I’ve been known to eat it straight from the pot, so no judging on my end.)

Slow cooker chicken Bolognese recipe

Yields 12 cups

Prep time: 15 minutes | Cook time: 6 hours | Total time: 6 hours 15 minutes

Ingredients:

  • 3 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 celery stalks, minced or finely grated
  • 2 large carrots, minced or finely grated
  • 3 garlic cloves, minced
  • 3 pounds ground chicken
  • 1/2 cup dry white wine
  • Salt and pepper, to taste
  • 2 (28-ounce) cans crushed tomatoes
  • 4 bay leaves
  • 3/4 cup half-and-half

Directions:

  1. To a large skillet set over medium heat, add the olive oil.
  2. Add in the onion, celery and carrots. Sauté over medium heat until the vegetables are starting to soften.
  3. Add in the ground chicken, and cook until browned. Drain the meat so there is no extra fat in the pan.
  4. Add in the white wine, and cook until the wine has evaporated. Season with salt and pepper, to taste.
  5. Add the mixture to a large, 6-quart slow cooker, and pour in the tomatoes and bay leaves. Stir to combine.
  6. Add the lid to your slow cooker, and cook on low for 6 hours.
  7. After 6 hours, take off the lid, stir, and taste. Season with salt and pepper if needed.
  8. Stir in the half-and-half.
  9. Serve hot over pasta, or use in any recipe where meat sauce is needed.
