We tried cauliflower rice pudding, and it was not what we expected

I admit, I didn’t trust that two packets of stevia would be enough, so I used four. It was probably too much. Two packets are going to do you just fine, unless you have an extremely sweet tooth.

Cauliflower rice pudding recipe

Ingredients:

  • 2 cups riced cauliflower
  • 1/2 cup coconut cream
  • 1/2 cup unsweetened almond milk
  • 2 eggs
  • 2 – 4 packets of stevia
  • Cinnamon, to taste

Directions:

  1. In a large bowl, combine the cauliflower, coconut cream and almond milk, and microwave on high for about 5 minutes.
  2. In a separate bowl, whisk the eggs with the stevia until well mixed.
  3. Slowly drizzle the egg mixture into the cauliflower mix, stirring as you pour. This keeps the egg from scrambling in the hot mixture. Stir everything together well, and microwave for a minute.
  4. Remove from the microwave, stir, and cook for another minute.
  5. At this point your pudding should be thickened. If, after you stir, the pudding still seems runny, microwave another 30 seconds or so.
  6. Sprinkle in cinnamon, and top with any fixings you like: nuts, berries, coconut flakes, chocolate chips.
