With warmer weather approaching, the less I can turn on the oven, the better. That’s all well and great, though, until I want a cookie, which happens to be at least five times a week.
Enter the no-bake cookie!

Most no-bake dessert recipes out there require a bunch of cooling and/or freezing time for things to set. The best part about this cookie recipe is that there’s none of that. A quick few minutes on the stove and just a few minutes more to harden up, and these cookies are all ready to be eaten (read: shoved into your face) and enjoyed!

No-bake chocolate-oat cookie recipe
Yields 10 – 12
Total time: 15 minutes
Ingredients:
- 1/4 cup unsalted butter (1/2 stick)
- 2/3 cup sugar
- 1/4 cup milk
- 2 tablespoons unsweetened cocoa powder
- 1/4 cup creamy peanut butter (or any nut butter)
- 1 teaspoon vanilla bean paste (or extract)
- 1-1/2 cups rolled oats
Directions:
- In a medium saucepan over medium heat, melt the butter.
- Add the sugar, milk and cocoa powder, and whisk until combined. Boil for 1 – 2 minutes, stirring frequently.
- Remove from the heat, and whisk in the peanut butter and vanilla until the mixture is smooth.
- Add the oats to the pot, and stir until well combined.
- Place spoonfuls of the mixture onto a parchment-lined baking sheet.
- Let the cookies set for about 7 – 10 minutes, then enjoy!
