No-bake chocolate-peanut butter cookies for when you cannot with the oven

With warmer weather approaching, the less I can turn on the oven, the better. That’s all well and great, though, until I want a cookie, which happens to be at least five times a week.

Enter the no-bake cookie!

Most no-bake dessert recipes out there require a bunch of cooling and/or freezing time for things to set. The best part about this cookie recipe is that there’s none of that. A quick few minutes on the stove and just a few minutes more to harden up, and these cookies are all ready to be eaten (read: shoved into your face) and enjoyed!

No-bake chocolate-oat cookie recipe

Yields 10 – 12

Total time: 15 minutes

Ingredients:

  • 1/4 cup unsalted butter (1/2 stick)
  • 2/3 cup sugar
  • 1/4 cup milk
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup creamy peanut butter (or any nut butter)
  • 1 teaspoon vanilla bean paste (or extract)
  • 1-1/2 cups rolled oats

Directions:

  1. In a medium saucepan over medium heat, melt the butter.
  2. Add the sugar, milk and cocoa powder, and whisk until combined. Boil for 1 – 2 minutes, stirring frequently.
  3. Remove from the heat, and whisk in the peanut butter and vanilla until the mixture is smooth.
  4. Add the oats to the pot, and stir until well combined.
  5. Place spoonfuls of the mixture onto a parchment-lined baking sheet.
  6. Let the cookies set for about 7 – 10 minutes, then enjoy!
