Cool watermelon-basil mojitos to rescue you from the dog days of summer

This mojito is as pretty as it is tasty. A bit of sweet from the watermelon, a splash of lime and a touch of savory from the basil make for a cool and refreshing cocktail.

I’m a picky watermelon eater. If the watermelon is the least bit too soft, then instead of eating it plain, I like to use it for drinks like this one.

For a nonalcoholic version, just omit the rum, and add a little bit more watermelon.

Watermelon and basil mojito recipe

Serves 2

Total time: 6 minutes

Ingredients:

  • 2 cups cubed seedless watermelon (rind removed)
  • 1-1/2 cups club soda
  • 1/2 a lime, juiced
  • 3 medium- to large-size fresh basil leaves (for the mojito)
  • 3 ounces light rum
  • 2 cups ice cubes (for the serving glasses)
  • 2 thin slices watermelon (with the rind on, for garnish)
  • 2 small sprigs basil (for garnish)

Directions:

  1. To a blender, add the watermelon, and blend until liquefied. Using a mesh strainer, strain into a pouring-type measuring cup or pitcher. Pour the strained, clear, watermelon liquid back into the blender.
  2. Add the club soda, lime juice, basil leaves and rum. Pulse until the basil is liquefied.
  3. Serve over ice, and garnish with watermelon and basil.
