Does Giada De Laurentiis Have a Pasta Chain in the Works?

When we consider our favorite guilty pleasures, layers and layers of Italian pasta is right up there. And when we dream of whom we would like to prepare that pasta, Giada De Laurentiis is at the top of the list.

While we get plenty of De Laurentiis via the Food Network and her cookbooks, we’re really excited about the news her cooking is about to get a lot closer to home. She may be planning to open up a national pasta chain.

“I’ve been wanting to do a fast-casual for forever,” the chef said in an interview with PopSugar. “I’ve learned from having a restaurant in Vegas that people love pasta and they love pasta at all different price points, to be honest.”

While these goals are in their “very, very early stages,” she’s testing the concept at a pop-up dinner at Chefs Club Counter in New York City on Oct. 15. Ticket-holders can enjoy a simple dinner with two pasta options — rigatoni with pork ragù or fusilli with jumbo shrimp — that will mirror the idea she has in mind for fast-casual restaurant plan. “I’m hoping that I get some really great feedback from people as to whether or not this is something that people would like,” De Laurentiis said.

Following that, she hopes to do more pop-up dinners nationwide before opening the first location of the chain, probably in the Midwest. But that’s not all she has going on. She’s also working on a quick-service restaurant slated to open in Las Vegas in early 2018 as well as another full-service fine-dining restaurant in Baltimore later that year.
