Delicious, unique recipes are important for great chefs — but so is finding ways to use up food and make sure it doesn’t go to waste. Ree Drummond (aka, the Pioneer Woman) knows how to do both. She just shared a yummy and cheesy recipe for chicken pot pie that uses ingredients that are probably stored in your freezer right now anyway.
Drummond uses chicken, puff pastries, and vegetables to make her Cheesy Freezer Chicken Pot Pie recipe, which she shared on Food Network’s YouTube Channel. “I love dishes like this where I can clean out areas of my kitchen. It is so satisfying,” she says in the clip.
She starts by mixing butter, chicken broth, and more in a large skillet, mixing it up the entire time, to create the sauce for the dish. After adding a few more ingredients for “quick flavor,” she lets it bubble and adds leftover, shredded, cooked chicken, frozen broccoli florets, and a frozen veggie mix from half-used bags that were stored in her freezer. (Because we all have previously opened veggie bags that we’ve forgotten about!)
“Chicken pot pies are great because there really aren’t any rules to the veggies that you add,” Drummond explains. “So honestly you could add frozen bell peppers, or even zucchini or squash if you wanted to.”
Some grated sharp cheddar cheese completes the delicious filling! She keeps it warm by assembling the lattice-work top made from a pre-packed puff pastry dough directly on the cast iron skillet. From there, she pops the whole thing in the oven.
Drummond garnishes it with more cheese and more after it’s done, creating a “beautiful supper” made “almost entirely from the little leftover things that I had in the freezer, and I needed to clean out anyway.” Amazing!
