It’s been a long year, and January isn’t even over yet. So on low-energy evenings, we’ve been letting Costco do a lot of the heavy lifting when it comes to dinner. Our method? Head to Costco (sign up for a membership here), stock up on one or two meals from the deli, grab a rotisserie chicken, and nab a pizza from the food court on the way out. That covers dinner for the work and school week if you have rotisserie chicken one night and make something simple with your Costco rotisserie chicken leftovers the next night. Costco’s heat-and-eat meals from the deli have always been a hit with us, offering tasty options like giant meatball subs and shrimp tempura taco kits. But their latest meal is a ravioli bake that tastes like restaurant food for less.
Instagrammer CostcoHotFinds posted a video of Costco’s new Mushroom Ravioli with Truffle Alfredo, which is available in the Costco deli for $5.99/lb. “It’s such a decadent, creamy, and delicious meal,” she said, “and it will definitely be on regular rotation in our house.”
The meal features mushroom-filled ravioli in a truffle-flavored alfredo cream sauce. According to CostcoBuys on Instagram, the ravioli is sprinkled with mozzarella, parmesan, and provolone cheese on top, and garnished with some fresh chopped parsley. Getting this meal ready to eat is easy. You can just take off the plastic lid and reheat the pan in the oven for 45 minutes to an hour, popping it under the broiler for the last 30 seconds or so to help the cheese on top brown for extra flavor. You can also portion the mushroom alfredo ravioli bake out onto microwave-safe dishes and reheat that way, which is even faster.
Instagram commenters had mixed feelings about this meal. Some said that the dish looked visually bland and unappetizing, but user scott_stacks said the meal was “so convenient and tasty!”
When you’re experiencing burnout, it’s freezing cold outside, and the sun is still setting far too early, sometimes you need to treat yourself to a few pre-made meals that can make eating dinner easier. Whether you opt for a tray of Costco’s newest ready-to-eat Mushroom Ravioli with Truffle Alfredo, an affordable rotisserie chicken, or go rogue with a pack of Costco’s new almond croissants, it’s one less thing you have to worry about this week.
