Molly Yeh’s ‘One-Bowl’ Baking Tip Is a Must-Know If You Hate Doing the Dishes — ‘It’s the Simplest Little Thing’

Baking is fun and all, but when the cookies, brownies, bars, or cakes are finally in the oven, the carnage of dirty dishes left on the counter can cause quite a headache. Molly Yeh has a solution — just don’t use multiple bowls (even if the recipe instructs you to!). She shared her “one-bowl” baking tip on Instagram over the weekend and it’s a game-changer for self-proclaimed lazy bakers.

“Most standard cookie and bar recipes follow a very similar format of combining fat and sugar, adding the eggs, some extracts, and then your dry ingredients,” Yeh said in her video. “And typically, a recipe will say, get out another bowl for all of your dry ingredients. I’m going to show you how I’m super-duper lazy because I truly, truly hate dishes.”

Yeh calls this tip “the simplest little thing,” and it really is. She first combines her “wet” ingredients (butter, sugar, eggs, and extracts) in the bowl of her stand mixer. But rather than getting out that dreaded separate bowl to mix her dry ingredients, she just adds them to the bowl of her wet ingredients.

“There are some tips that are going to help you maximize your success with this method, though,” she noted.

She said that you’re always going to want to put your flour in first because it’s usually the largest amount of dry ingredient you’ll use. Then, with the smaller amounts of dry ingredients, you’ll want to sprinkle them evenly over the top of the flour with your tea or tablespoons.

“Before I get this back onto the mixer, I’m going to take a fork and just gently give this a rough little mix,” Yeh said. “Some of the lumps of the wet ingredients get incorporated in prematurely — that’s totally okay.”

And that’s it! Pop your mixing bowl back onto the mixer (or start combining your wet and dry ingredients by hand) and you’re good to go. Your recipe will turn out just as delicious as it would have if you used the two-bowl method, but you can save yourself the trouble of washing that second dish. Life in the kitchen just got so much easier!
