Giada De Laurentiis’ Lemon Spaghetti Soup Is ‘So Comforting’ & It Only Takes 15 Minutes to Make

Soup season is still in full swing and Giada De Laurentiis has a spin on a classic chicken soup loaded with delicious lemony flavor that you’ll feel warm (and healed!) after your first spoonful. It’s basically her Lemon Spaghetti recipe in soup form with a few added ingredients, and the entire thing comes together in just about 15 minutes.

“I’m craving a soup that I used to make all the time right after I had Jade,” De Laurentiis said in a recent Instagram video. “It’s a lemon chicken soup. So fast, so easy, so comforting.”

She starts by bringing about six cups of chicken stock to a boil, and adding in a bay leaf and a parmesan cheese rind for flavor. De Laurentiis usually uses precooked and shredded rotisserie chicken in this soup, adding it right at the end. But this time, she cooked a few chicken breasts right in the stock. When the broth comes to a boil, she adds in carrots, the juice of two lemons, and her uncooked spaghetti.

When the spaghetti is tender, add in the final two ingredients: chopped Italian parsley and grated Parmesan for a little freshness and bite. Finally, you’re ready to eat!

“The broth is so lemony,” De Laurentiis said in her video. “It’s my favorite … It’s the most comforting thing.”
