St Patrick’s Day recipes: A taste of Ireland

Get your blood flowing with some stout Irish treats! All of these recipes make great gifts or desserts for a St Patrick’s celebration – or morning after. Just keep them away from the kids- most of these recipes contain a touch o’ whiskey!

Irish Tea Bread

Makes 1 loafBaking is a science and this recipe uses weight instead of volume for the ingredients. Pull out that kitchen scale and get baking!

Ingredients:
12 tablespoons strong tea
1 pound mixed dried fruit of your choice, chopped
6 ounces brown sugar
1 ounce butter, melted, divided 
1 egg, lightly beaten
9 ounces all-purpose flour
1/2 teaspoon baking soda

Directions:
1. Place the tea, mixed fruit and sugar in a bowl, cover and leave overnight. The next day, preheat oven to 360 degrees F. and line the bottom of a large loaf pan with parchment paper. Brush with half of the melted butter.

2. Remove fruit mixture from refrigerator and stir in the egg and remaining melted butter. In a second bowl, sift the flour and the baking soda together and fold them into the fruit mixture. Pour the mixture in and smooth the top.

Bake for 1-1/2 hours. After removing from the oven, leave bread in the pan for a few minutes. Turn out of pan and cool on a wire rack.

The Original Irish Coffee

Serves 1

Ingredients:
1 cup coffee, fresh brewed 
1 tablespoon granulated sugar 
3 tablespoons Irish whiskey (1 jigger)
Whipped creamDirections:
Pour coffee into large mug. Add sugar and stir to dissolve. Add whiskey and stir to combine. Top with whipped cream and serve.
