When The Pioneer Woman (a.k.a. Ree Drummond) does barbecue, you know she makes her barbecue a bit more special than any other recipe you’ll find. In a recent Instagram video, Drummond shares how she made her “winner” barbecue chicken using classic ingredients like onion, garlic, Worcestershire, and bottled barbecue sauce, and a couple of surprise guest stars: peaches and whiskey!
“Love this winner of a chicken dinner!” Drummond captioned her post. “Simmers about an hour and the chicken is fall-apart tender. Chicken thighs, onion, whiskey, barbecue sauce, garlic, peach preserves, Worcestershire, peaches…serve over mashed potatoes, or just eat it by itself!”
She added, “Sometimes I’ll remove the chicken and reduce the sauce to thicken…but I was too impatient for that this time. Peach whiskey BBQ chicken FTW! (And I love my new denim blue PW cookware.)”
She first starts by seasoning and cooking her chicken thighs in butter, allowing the skin to crisp up on both sides. She removes the chicken grease and then sautees her chopped onion and adds a good helping of whiskey. After that cooks down for a while, Drummond adds her favorite bottled barbecue sauce and a few spoonfuls of peach preserves. She adds her garlic in now, too.
Finally, she seasons the sauce with Worcestershire, salt, and pepper, and adds in her fresh peach slices. In goes the chicken again and on goes the lid to simmer while Drummond makes a side of mashed potatoes.
