The Pioneer Woman’s Crash Hot Potatoes Are Like Your Favorite Smashed Potato Recipe — But Better

You’ve likely had (and loved) smashed potatoes before. They’re flattened potatoes that are crisped to perfection in the oven and sprinkled with a bit of salt and pepper before serving. But The Pioneer Woman (a.k.a. Ree Drummond) is going above and beyond the standard smashed potatoes in her Crash Hot Potatoes recipe. She’s smashing, she’s crisping, and she’s topping like you would a baked potato, thus making the Crash Hot variety the best kind of smashed potato you can make.

Like the smashed potato recipe you know and love, Drummond’s Crash Hot Potatoes start in boiling water. “You want to cook them until they’re fork tender,” Drummond said in the clip below. This will make the “crashing” step easier.

Once your potatoes are fully boiled and out of the water, take a potato masher dressed with oil to prevent sticking and mash the potatoes on a sheet pan one way. Then, turn your masher and mash them again to really flatten them out.

“Just when you think you can’t smash it anymore, you want to stop,” Drummond said. “And you basically want the potato to look like a total mess.”

Give your potatoes a healthy dose of olive oil, salt, and pepper before sticking them into a super-hot oven. When you pull them out, they should be golden brown and crispy. Finally, it’s time to top your Crash Hot Potatoes with all the good stuff — bacon, cheese, chives, sour cream, and really anything else that suits your fancy.
