The Pioneer Woman’s Egg Bites Are the Perfect On-The-Go Breakfast or Brunch Snack

Even though sitting down at the kitchen table to enjoy a leisurely breakfast is probably preferred, most of us are usually in a time crunch to get out the door in the morning — and that means grabbing breakfast on the go. Be it a fast food breakfast sandwich, a donut and coffee, or bringing a granola bar in the car, grab-and-go breakfasts don’t have the best reputation for being nutritious. But Ree Drummond is here to change that with her Ready-To-Go Egg Bites.

Her recipe first starts with sauteeing some chorizo with onion to give her egg bites a bit of flavor, but you can add really anything you want to the recipe’s base ofeggs, heavy cream, sour cream, salt, and pepper. Spinach, ham, bacon, mushroom — the list goes on.

“This is a great recipe because you can do so many different versions,” Drummond said in a video posted to the Food Network Instagram page. “Imagine anything you would put in an omelet, and that’s what you can put in a Ready-To-Go Egg Bite.”

Then, it’s time to start assembling and cooking. Drummond uses her Instant Pot multi-cooker to steam her egg bites and uses a silicone egg mold specially designed for use with multi-cookers to keep everything neat and tidy. This set of two from Amazon is just like the one Drummond uses.

These egg molds are BPA-free and come with lids so you can make your egg bites ahead of time, store them in the fridge, and cook when you’re ready.

She first adds her toppings to the bottom of the molds (including a hefty helping of shredded cheese), and then Drummond pours her egg mixture on top to just below the rim of the mold. She then places the filled egg mold into the Instant Pot with the wire trivet and some water and steams for 10 minutes.

“These are so great,” Drummond said. “Imagine sending these out the door, two at a time, wrapped in a paper towel for your teenagers. Or, if you’re like me, you can enjoy them on a plate with a cup of coffee and a glass of orange juice.”
