We’re charging head-first into comfort food season, and if you’re looking to add a few new stick-to-your-ribs recipes to your repertoire, then check out this creamy and delicious chicken dish from Martha Stewart. It takes less than an hour to make and is packed full of comforting flavors that will perfectly prepare you to slip into a long winter’s nap.
“All the action for this creamy chicken and egg noodles with mushrooms happens in one large straight-sided skillet,” the caption on Stewart’s official Instagram page reads. “We love an easy chicken dinner on a weeknight, especially when there’s a creamy sauce, silky egg noodles, and it takes just 45 minutes from start to table. Get the recipe at the link in our bio. 📷: @johnny_miller_.”
This dish starts with boneless, skinless chicken breasts, which you want to flatten a bit before placing in said skillet with some oil. After a quick sauté, remove the chicken and add in your mushrooms (Stewart likes to use button mushrooms, but you can pick your favorite), seasoning as you go.
Once browned and soft, add in shallots and cook them down until they’re transparent. Then add a bit of Dijon mustard for flavor before mixing in your uncooked egg noodles with some chicken broth.
Once everything is nice and hot and the noodles have gotten tender, add in cream cheese to bring the creaminess to this dish. Place the chicken back into the skillet and allow it to finish cooking and absorb all the flavors from the sauce. Finally, you’re ready to serve!
“This recipe is amazing. My husband loves it,” one Instagram commenter wrote. Another added, “My whole family loves this dish. So good!”
You could easily tweak this dish to suit whatever ingredients you have in your fridge, too. Spinach would be a nice add-on toward the end after the noodles finish cooking. Or if you have some leftover asparagus from the night before, you could give that a quick chop and add it in. Feel free to get creative.
