Eating healthy in 2024 doesn’t mean having to totally give up your sweet treats — you may just have to modify them! And Giada De Laurentiis proves that dessert modifications can be easy and taste even better than the real deal. Her take on classic Italian budino is rich, creamy, and so good for you that you can even eat it for breakfast.
“A budino is a decadent, delicious custard-based Italian dessert — and this is our healthy spin on it!” a recent Giadzy caption reads. “Chia seeds and coconut yogurt work together to make this luxuriously rich pudding that’s chock-full of healthy superfoods. This is a dessert you’ll really feel good about eating!”
You create your budino pudding similarly to the way you’d prepare a batch of overnight oats. First, whisk together cocoa powder, maple syrup, vanilla extract, almond milk, coconut yogurt (though regular yogurt works well, too!), and a pinch of salt. Then, add in your chia seeds and allow the mixture to sit for at least six hours, giving the chia seeds plenty of time to soak up all that delicious chocolatey flavor.
Finally, you can serve your budino topped with fruits, chopped nuts, or even a sprinkling of shaved coconut. And like overnight oats, you can pour your pudding mixture into small jars to take with you in the morning before you’re out the door. Or, treat yourself to a premade jar after dinner every night to satisfy your sweets craving without breaking out your tin of emergency cookies.
