Katie Lee Biegel’s Hidden Heart Ice Cream Cake Is Perfect for Valentine’s Day & Couldn’t Be Easier to Make

Valentine’s Day is coming up, and the sweetest way to show someone you love them is simple: bake them something! A from-the-heart gift — with a literal heart inside — is both delicious and perfect for the holiday. Katie Lee Biegel recently shared her recipe for a homemade ice cream cake with a hidden heart in the center, and we definitely want to make this for our loved ones next month!

Start With Hearts

In an episode of Food Network’s The Kitchen, shared on YouTube, Biegel and chef Jeff Mauro demonstrated how to make her Hidden Heart Cake, and it looks so good! Begin by mixing melted butter, eggs, and other ingredients in one bowl. A red gel food coloring will give it the super bright red color needed for the heart inside. In another bowl, whisk the dry ingredients, then combine with the first bowl.

The thick batter is then placed into a sheet pan and baked. When it’s done, Biegel uses a heart-shaped cookie cutter to easily cut-out a dozen red hearts and stack them on top of each other.

Next, it’s time for the ice cream!

Ice Cream

Line a loaf pan with plastic wrap and fill it with a little bit of vanilla ice cream, then freeze it to create a solid base layer. Spoon some softened ice cream on top of the frozen, then carefully place your heart tower in the middle, pointy side up. To finish the ice cream cake, Biegel scoops more ice cream on top, then mixes the leftover red cake crumbs with sprinkles and crumbles it on top. It goes back in the freezer for at least 4-6 hours.

When the cake is ready, the plastic wrap you used will help it come out of the pan nicely. She flips it upside down and cuts into it, revealing the white ice cream cake with a pretty red heart in the center.

Results

“Nice, little chewy, dense, blondie vibe in the middle, all surrounded and encompassed by that velvety ice cream and little crunchies on the outside,” Mauro gushed after trying a bite. “I love it!”

Ice cream cake is so good, and this elevates it even more with the hidden heart inside each slice. It beats store-bought chocolates any day!
