Shrimp scampi is a “treat yourself” kind of meal. The garlic and the shrimp create a flavor you just can’t beat, and it’s the type of comfort food that can (and should!) be made any day of the week. But sometimes, you don’t have time to pull together a scampi from scratch. That’s why Ree Drummond likes to make her scampi in casserole form, so you can put it in the freezer for those nights when you need something comforting but are tight on time.
“We’ll have a pan of it for dinner tonight, and then I’ll put the second pan in the freezer and we’ll whip it out whenever we need it,” Drummond said about her Shrimp Scampi Stuffed Shells recipe in the below video.
She first starts by boiling her jumbo pasta shells and cooking down her garlic at the same time. After pulling the noodles from the water, Drummond adds her shrimp to the garlic pan — and she likes to chop her shrimp into bite-sized bits for easy stuffing later on.
Drummond then adds a dash of red pepper flakes, white wine, lemon juice, salt, and pepper while the shrimp finishes cooking. And then she removes everything from the heat.
To bring even more comfort to this comforting dish, Drummond also makes a white sauce to fit the casserole vibe. This sauce starts with a roux of butter and flour. Then, add milk and heavy cream to make the base of the sauce, topping it off with more garlic, salt, pepper, and chopped parsley.
“I love any creamy pasta dish,” Drummond said. And amen to that.
The last component of this dish is the cheese mixture. It’s a blend of ricotta cheese, softened cream cheese, parmesan, and a beaten egg to hold it together. The cooled shrimp and garlic mixture also goes into the cheese mixture before stuffing the shells.
The white sauce goes on both the bottom of the baking dish and the top of the shells once they’re stuffed, and the entire casserole is topped with a bit of shredded mozzarella before going in either the oven or the freezer.
