St. Patrick’s Day is almost here, and there are a pot o’ gold’s worth of St. Patrick’s Day food traditions we look forward to each year, from corned beef and cabbage to buttered soda bread fresh from the oven. But the real thing we’re always looking for this time is quick and easy St. Patty’s Day desserts to make with kids. Anything to make mid-March seem a little bit more magical, right? So when we saw that The Pioneer Woman had a colorful St. Patrick’s Day sweet treat recipe made with Lucky Charms cereal, we knew we’d have to make it this year.
Thankfully, these St. Patrick’s Day marshmallow cereal treats from The Pioneer Woman are just as easy to make as the cereal treats you’re used to, with just one extra step added to make these worthy of a holiday. The Pioneer Woman calls for melting marshmallows (she uses mini-marshmallows, which melt more evenly) and butter together in a big pot, adding vanilla and salt, then stirring in Lucky Charms cereal.
Lucky Charms Cereal with Marshmallows
The marshmallow cereal treats are pressed into a pan to cool. Once they’re cooled, they get cut into squares, then dipped into white or green melting chocolate. Then, they’re decorated with sprinkles and extra Lucky Charms marshmallows.

Some people also add a few extra steps or ingredients to make for the most delicious marshmallow cereal treats. You can try browning the butter before adding marshmallows to the pot, which will add a nutty, toasted flavor to your treats. And if you want your cereal treats to be on the gooey side, and to stay softer for longer, you can try adding some sweetened condensed milk to the melted butter before adding the marshmallows and vanilla.
These sweet, cripy, chewy Lucky Charms marshmallow treats are one of the tastiest ways to celebrate St. Patrick’s Day. They’ll be a hit at school celebrations, potlucks, the office, or simply eaten at home with the family on March 17. If you already love Rice Krispies treats, then this is one cereal dessert recipe you have to try.
