Katie Lee Biegel’s Roasted Garlic Guacamole Is a ‘Next Level’ Take on a Classic Appetizer

Guacamole is always a crowd-pleaser, but Katie Lee Biegel just turned it into a crowd-pleaser that the crowd will literally beg you to bring to every gathering and party. By adding in a head of roasted garlic, your guacamole recipe will go from good to great and you’ll find it hard to go back to your old guacamole recipe after trying this one out.

“Roasted Garlic Guacamole, yes, please,” Biegel captioned a recent Instagram post. “One extra step, roasting the garlic before you add it, will make your guacamole next level.”

To make enough of this guacamole to feed the masses, you’ll need a head of garlic, a serrano pepper, at least four Hass avocados, a lime, some cilantro, as well as olive oil, salt, and pepper.

The first step is to roast your garlic, so slice the top off the head and place it onto a sheet of foil. Drizzle some olive oil over the top, wrap it up tightly, and roast for about 30 minutes in a 400-degree oven. You can also do this in a smaller toaster oven, too, if you have one.

After your garlic has completely cooled, squeeze the golden brown cloves out of their peels and into a food processor, adding the rest of your ingredients (except for the cilantro). Pulse until you get a chunky texture and then transfer to a bowl and add your chopped cilantro.

Just like that, you’re done and ready to eat!

“Going to make this for a St. Patrick’s Day party Friday!!” one person commented on Biegel’s post. Another added, “So many health benefits to avocado so adding the roasted garlic just makes it not only tastier but better for you!”

“Sooo I love roasted garlic but my house smelled so garlicky for a while,” someone else said, to which Biegel replied, “I think that’s a good thing.”

“This might have just changed my life. Could I add raw onion too or that’s [a] step too far?” another person asked. Biegel answered, “I got no problem with some chopped onion in there.”

Do a bit of experimenting with your guacamole recipe and try adding roasted garlic for an extra kick. You definitely won’t be disappointed!
