Backyard BBQs are one of the best — and certainly one of the most delicious! — parts of the summer. And while many people bring meat to grill, Ina Garten has a different idea. She just shared her make-ahead short ribs recipe that “travel well,” so you can bring your delectable, fully cooked contribution to a summer BBQ and not have to worry about a thing.
3 Basic Principles for a Potluck Party
“For a potluck party, I have three basic principles,” Garten says in a new video shared on the Food Network YouTube. “Make it ahead, make things that travel well, and make it so delicious.”
Her Short Ribs recipe fits all three, and you’ll want to make this for every upcoming get-together. She ordered nine short ribs with the fat trimmed off from her local butcher. The Barefoot Contessa starts by lining the short ribs on a cookie pan, then sprinkling some seasoning on each one. She then puts it in the oven to “caramelize and sear” the meat — yum!
While that’s cooking, Garten goes to work on the vegetables and sauce for the short ribs. She chopped up leaks, carrots, and more vegetables to use in the sauce. “Short ribs can be really rich,” Garten says in the video. “So I like a really nice, fresh vegetable sauce to go with it.”
After Garten pours these veggies into a saucepan with oil, she adds red wine and other ingredient, then mixes it all together. She pulls the ribs out of the oven to combine with the sauce and cook it “slowly for a long time.” Just watching the video, we can practically smell the meat-and-sauce combination, and our mouths are already watering!
Later in the video, Garten ties a bundle of herbs together and puts it right in the sauce. After a few more ingredients, the meal is ready to go back in the oven. She cooks it at a lower temperature for about two hours to make them “meltingly tender.”
One More Thing…
Despite how good the meat looks, there’s one more step you have to do before you can dive in (or pack up the ribs to-go). Garten pulls the ribs out of the pot and the little bundle of herbs to reduce the sauce even more. This will “really intensify the flavor,” according to Garten. And who doesn’t want that?! She also removes some of the fat from the top and lets it simmer for about 20 minutes.
From there, just add the ribs back to the pot, put the lid back on, and head to your BBQ!
