Although we live in a society that says cake should really only be enjoyed after dinner, we believe that societal norms are meant to be challenged. And the olive oil cake Jennifer Garner recently made on the latest episode of Pretend Cooking Show on Instagram is doing just that. Garner was joined by her friends Jon Shook and Vinny Dotolo from to celebrate Baby2Baby and make their famous lemon olive oil cake, which Dotolo dubbed an “anytime cake.”
“Olive oil cake — it’s an anytime cake,” he said in the episode. “You can eat it at breakfast, lunch, and dinner.” What’s not to love about that?
To make Jon & Vinny’s Lemon Olive Oil cake, you’ll need good olive oil, eggs, granulated, raw, and powdered sugar, whole milk, lemon juice, lemon and orange zest, flour, baking soda, baking powder, vanilla extract, amaro del capo, and salt.
Shook recommends (to Garner, specifically) gathering together all the pre-measured ingredients ahead of time to make the assembly process much easier and more efficient. “Literally never do that,” Garner said. Same.
Dotolo also gave Garner a tip on testing. You can hold your zester grate-side down and work your way around the lemon in a way that you can see where you’ve already zested. This allows you to collect the zest within the sides of the zester top and get a better idea of how much zest you’ve, well, zested.
“I would have to practice that,” Garner said. “I’m not there yet.”
The cake comes together the way most cakes do. The dry ingredients are mixed, and the wet ingredients (including the granulated sugar) come together in a separate bowl. Everything is then combined and poured into an oiled springform pan and left to bake for about an hour. Then, when cooled, you’re ready to sprinkle with powdered sugar and serve!
