During the summer, quick and easy dinner recipes are a must-have for your weekly meal rotation. You don’t want to be trapped in a hot kitchen for hours on end, but you also want something that is going to fill you up after a long summer’s day. This Alex Guarnaschelli tomato sauce recipe is the best of both worlds — it’s fast, easy, and super satisfying. Plus, you can use up whatever pasta you have on hand because the sauce is so versatile.
To start the sauce, Guarnaschelli first cooks grated garlic in hot olive oil in a nonstick pan. She then adds a splash of water to help get the raw garlic taste out and then a good helping of tomato paste when the garlic has begun to cook down. Allow the paste to “fry” in the garlic, oil, and water to really bring out that tomato flavor.
Then add halved cherry tomatoes and allow them to soften before adding in heavy cream to thicken the sauce and give it that “blush” color Guarnaschelli talks about in her clip from Food Network’s The Kitchen.
Season your sauce with salt and pepper to taste and keep it warm while you cook your pasta in a separate pot of boiling water. Guarnaschelli opted for angle hair pasta during her demo, but she writes in the comments of the Food Network post that “the sauce is easy and good on all pasta shapes.” Just make sure to add a splash of pasta water after placing the pasta in the sauce to keep the consistency creamy. Then, serve up!
