These Strawberry Lemonade Collagen Popsicles Are the Sweet Treat Your Hair, Skin, & Nails Need This Summer

As soon as I said goodbye to my late twenties, I started to notice visible signs of aging in my skin. Granted, no one other than me seemed to notice the small changes but I decided it was time to start taking my skincare routine a bit more seriously. In addition to tweaking the topical products I used, I started paying more attention to ways I could reduce visible aging from within. Earlier this year I added collagen supplements into my diet because I kept reading about how great it could be for hair and skin, but also joints as they age.

According to the Cleveland Clinic, collagen “provides structure, support or strength to your skin, muscles, bones and connective tissues.” They do note, however, that “Scientific research is lacking for most collagen supplements, but a well-balanced diet gives your body the raw ingredients it needs to help it make collagen naturally.”

I eat a mostly vegetarian diet and struggle to eat enough protein so I decided to add collagen powder to supplement my protein intake. I usually added a scoop of powder to my morning coffee but now that it’s sweltering outside and I am back to my strict iced-coffee-only policy, I’ve started to experiment with new ways to add collagen to my diet because it just doesn’t dissolve as nicely in iced coffee as it does in hot.

I’ve tried quite a few recipes but my favorite is by far, these no-sugar-added strawberry lemonade popsicles. It only takes 7-10 minutes to make a whole batch and best of all? They’re delicious. Here’s how to make them.

Strawberry-Lemonade Collagen Beauty Popsicles

Ingredients:

  • Fresh strawberries, 2 lbs
  • Stevia (or alternative sweetener), 1/4 cup
  • Lemon juice, 3 tbsp
  • Isopure lemonade collagen powder, one scoop
  • Xantham gum, 1/2 tsp
  • Kefir, 1/4 cup (optional)

Instructions:

  1. Slice fresh berries into a saucepan.
  2. Turn the heat to medium-low and use a potato masher or meat masher to chop the berries until they’re the size you want. I prefer bigger chunks of fruit in my popsicles but you can chop them as small as you like.
  3. Add your stevia or preferred sweetener and lemon juice and mix. Stir the mixture over medium-low heat for about 7-10 minutes.
  4. Turn off the heat and slowly sprinkle your xantham gum into the mixture and stir continuously until combined. Sprinkling your xantham gum instead of dumping the full amount will help reduce clumps.
  5. When the mixture is still warm but not hot, add one scoop of Isopure lemonade collagen powder and stir until combined.
  6. Pour the mixture into popsicle molds and freeze for 12 hours or overnight.

Optional: You can pour 3/4 of your mixture into the molds and then mix 1/4 cup of kefir into the remaining 1/4 of the mixture and then fill the molds with the kefir mixture. I tried this because I had some leftover kefir in my fridge that I wanted to use and it tasted great and gave the popsicles a fun, layered look. But if you don’t have kefir or simply don’t like it, you can leave it out.

Notes: The xantham gum helps stabilize the liquid and gives you a “chewier” popsicle that’s less icy and closer to the texture of traditional store-bought popsicles. If you want to leave it out, you can, you just will get a harder, more icy texture.
