The Pioneer Woman’s ‘Queso for a Crowd’ Is Loaded With Flavor & Can Simmer Away in the Crockpot at Your Next Family Gathering

It’s hard to find someone who doesn’t like queso. It’s just the perfect warm dip to serve at a gathering — it’s cheesy, a bit spicy, and can be dressed up or down in so many different ways. The Pioneer Woman (also known as Ree Drummond) has a delicious queso recipe she likes to take with her to parties and it’s so easy because the entire thing comes together in the crockpot.

“Queso for a crowd!” Drummond captioned a recent Instagram post. “Make it, latch the lid, and take it!”

Drummond first starts by browning a few green poblano chile peppers on her stovetop (no pan required!). She then fries up some chopped bacon and chorizo in her cast iron skillet, removing the meat to then cook chopped onion in the bacon and chorizo fat right after.

The onions go into a blender with some chopped canned tomatoes and diced jalepeño peppers to make a creamy salsa.

Next, it’s time to load up her crockpot (the speckled version of her classic Pioneer Woman crockpot at Walmart is now available, FYI). Drummond adds in a few different cubed cheeses — what looks to be Velveeta and cheddar, but you can use whichever cheese is your favorite — the meat mixture, the salsa, two cans of evaporated milk, and the diced poblanos.

The lid of the crockpot goes on, and Drummond lets the ingredients do their thing. When she gives the queso a stir halfway through the cooking process, it’s hard to keep your mouth from watering.

You can then top the queso with some chopped cilantro and a squeeze of lime juice before serving it to your friends and family.
