Have you ever had a meal that’s so good that you want to marry the person who made it? That happened to Prince Harry after Meghan Markle cooked a roast chicken that was so delicious he had no choice but to propose that night. And that was no coincidence. Markle had prepared Ina Garten’s Engagement Chicken, which is a recipe that Garten saves for the most special occasions, such as, well, an engagement!
The meal starts with a whole raw chicken that Garten likes to pat dry to help it brown while it’s in the oven. She then likes to focus her attention on flavoring the chicken from the inside out. She first puts a large helping of salt and pepper into the cavity as well as half a lemon and an entire head of garlic that’s been halved.
The chicken is then placed into a roasting pan and the legs are tied together with a piece of twine. The outside of the chicken is massaged with olive oil before being salted and peppered.
Garten then throws the other half of the lemon, as well as another quartered lemon, and chopped Spanish onions into a bowl with some olive oil, salt, and pepper. She then uses her hands to mix everything together before tossing the lemon and onions into the pan with the chicken.
Everything goes into the oven and roasts for over an hour. And when it’s done, pull the chicken out of the pan and let it rest under aluminum foil for at least 10 minutes while you make a sauce using the roasted onions and lemon left in the pan. Deglaze the pan with dry white wine, then add chicken stock and a bit of flour to thicken everything up.
