No dessert screams fall quite like pumpkin pie and Giada De Laurentiis has a fun new take on the classic fall dessert. It’s light yet fudgy, creamy yet spicy, and is totally gluten-free so everyone at the table can enjoy a slice. It’s called a Torta Caprese and the Giadzy team customized the recipe for fall, and this may just become your new go-to bake for the season.
On Oct 12, de Laurentiis shared a compilation video of all the fall recipes you need to try ASAP. She shared the video with the caption reading, “You’ll want to cozy on up to these fall recipes. Tap the link in our bio and start cooking!” (And in the compilation video was the Pumpkin Torta Caprese.)
And if you already have all the necessary ingredients to make pumpkin pie, you’re ready to make this delicious Torta Caprese.
The Pumpkin Torta Caprese is a Giadzy member exclusive recipe, but it bakes up super similarly to De Laurentiis’ classic Torta Caprese. Melt together a bit of white chocolate and butter in a double boiler until smooth. Then, after allowing the mixture to cool for a minute or so, add your spiced pumpkin puree to the mix.
In two separate bowls, separate your egg whites from the yolks. Add a bit of salt to the whites and whip them up with a handheld mixer until stiff peaks form. Then, combine your sugar with your yolks and mix them together until they turn a pale yellow color. To the yolks, add your pumpkin mixture, almond flour, and vanilla extract. Then fold in your whipped whites in small batches. Pour the batter into a prepared cake pan and bake until the torta is puffed and cracking on top.
Then, you’re ready to eat (perhaps with a bit of ice cream or whipped cream)! If you’re a Giadzy member, check out the full recipe here and get ready to welcome in fall with one of the most delicious pumpkin deserts ever.
