Every chef, both professional and amateur, has their go-to meal. At Katie Lee Biegel‘s house, it’s a simple roasted chicken recipe that her husband always asks her to make (and it’s easy to see why). On a recent episode of her All On The Table podcast, Biegel talked about her Roasted Chicken with Croutons and what makes it so special and there’s no way your mouth won’t be watering by the time she’s done walking us through the recipe.
“What’s the dish you make that everyone asks for?” Biegel asked in a clip from her podcast. “At our house, it would be my roast chicken with croutons. That’s one that Ryan is absolutely obsessed with. It’s one of the dishes that I first made for him when we got together.”
And this is also one of those recipes that couldn’t be easier to make. “I take a baguette, I slice it, I butter it, I put it butter-side down in the bottom of a cast iron skillet,” Biegel continued. “I season a chicken, set it on top of the sliced baguette, and then roast it. And all of those chicken drippings goes right into the bread, and it toasts, and it’s so good.”
Biegel likes to season her whole chicken with a generous mixture of salt, pepper, and garlic powder, and she also likes to stuff the cavity with fresh rosemary, thyme, garlic, and onion. The key to getting the perfect roast and toast is to preheat the cast iron pan in the oven before you add your baguette and chicken. She also likes adding some chicken stock to the skillet to keep everything moist and the bread from burning.
And finally, Biegel likes to top everything off with a bit of sauce made from the leftover bits from the cast iron pan, some white wine, chicken stock, and butter.
Biegel says this chicken dish is best served with a green salad, but you could also do a side of green beans, spinach, or another cooked vegetable to keep the meal feeling hardy.
