With school back in session and weeks booked up again, finding time to cook delicious and nutritious dinners can feel impossible. But if you have about 30 minutes, you can make Ina Garten‘s Parmesan Chicken, which is so simple yet so delicious that you’ll add it to your weekly dinner rotation upon first bite.
To make Parmesan Chicken, you first want to set up your breading station by mixing about a cup of flour with some salt and pepper in one dish, whisking together a couple of eggs in another dish, and then putting prepackaged seasoned breadcrumbs with finely ground parmesan cheese in the third dish. Garten likes to chop an entire wedge of parmesan and grind it up fresh in a food processor.
She then pounds her boneless, skinless chicken breasts flat between two pieces of wax paper before firing up a pan and starting the coating and frying process. You want to coat your chicken with flour first, then egg, then the breadcrumbs before placing it in a hot pan with oil and butter. Cook the chicken for about two to three minutes on each side.
Garten likes to serve her chicken with a cold and zesty salad on top, which she makes using washed baby salad greens. She whips up her own vinaigrette with some lemon juice, olive oil, salt, and pepper and puts the dressed greens right on top of the chicken before serving.
