Serves 6 Ingredients:
1/4 cup brown sugar, packed
1 1/2 tablespoons cocoa powder
1/2 cup warm water
5 cups strong brewed espresso coffee
Whipped cream or nondairy whipped topping Directions:
Place sugar, cocoa powder, and water in a large saucepan over medium-high heat. Bring to a boil, stirring constantly to dissolve sugar and cocoa, until mixture is smooth. Reduce heat and simmer on low for 3 to 4 minutes. Remove from heat and add coffee, stirring to combine. Transfer mixture to a shallow dish or tray and cool completely. Place dish or tray in freezer on a level shelf. Freeze until partially set. Remove from freezer and stir mixture with fork to distribute ice crystals. Return to freezer and freeze again until firm, about an hour. Remove from freezer and using a fork, grate the frozen coffee into fine crystals. Return to freezer for about an hour before serving. Spoon into wine glasses and serve immediately with whipped cream or topping sprinkled with cocoa powder, earthy spices, or citrus zest.
