Honeydew Melon Soup
Light and delicately flavored, this soup anoints a summer’s meal, either as first course or dessert. Be sure the melon is chilled before you use it.
Serves 4
Ingredients:
- 1 ripe honeydew melon, skinned and cubed
- 1 cup fruity white wine
- 1 tablespoon honeyJuice of
- 1 limeMint leaves for garnish
- Heavy cream for garnish
Directions:
- Put the melon, wine, honey, and lime juice into a blender, and puree until smooth.
- Pour the soup into individual soup bowls, and garnish with mint leaves and a swirl of heavy cream.
